Blueberry White Chip Muffins
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup packed brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 large egg, lightly beaten
1/4 cup of butter or margarine, melted
2 cups (12-ounce package) premier white morsels
1 1/2 cups fresh or frozen blueberries
Streusel topping (recipe follows)
PREHEAT oven t0 375F, paper-line 18 muffin cups
COMBINE flour, sugar, brown sugar, baking powder, and salt, in a large bowl. Stir in milk, egg, and butter. Stir in blueberries, and white chocolate morsels. Spoon into prepared muffin cups. Filling almost full. Sprinkle with streusel topping.
BAKE for 20-25 minutes, or until toothpick is inserted and comes out clean. Cool in pans for 5 minutes, remove to wire racks to cool slightly. ENJOY
STREUSEL TOPPING: COMBINE 1/3 cup granulated sugar, 1/4 cup of all-purpose flour, and 1/4 teaspoon of ground cinnimoin, in a small round bowl. Cut in 3 tablespoons butter or margarine with pastry blender or 2 knives (but we like to do it with or hands, or a fork) until mixture resembles coarse crumbs.
